Broccoli Cheese Soup

Ingredients
1 32 oz. bag frozen chopped broccoli64 oz. fat free chicken broth1 can diced tomatoes with green chiles (Ro-tel)8 oz. light Velveeta
Directions
In a large pot, bring chicken broth to a boil. Add broccoli and tomatoes. Return to boil, reduce heat. Cover and simmer for 1 hour. Remove from heat and add diced cheese. Serve when cheese melts.

    I added a few extra spices. My soup was a little too runny for me so I added some potato flakes to thicken. - 1/16/08
