3 tbsp *Flax Seed 225 gram Wholesome Organic Coconut Palm Sugar (by TWOCHICSENL) 3 1tsp Coconut Oil 1.25 cup, mashed Zucchini 1 tsp Vanilla Extract .66 cup Cocoa, dry powder, unsweetened .5 tsp Baking Powder 0.25 tsp Salt - Iodized Sea Salt (by HIATTP) .5 cup Flour - Gold medal all purpose flour 8 tbsp Hershey's Special Dark Chocolate Chips .5 cup Confectioner's Sugar (by JERSEYGIRL07) 1.5 tbsp Cocoa, dry powder, unsweetened 1 tbsp Maple Syrup 2 tsp Becel - Vegan Margarine (by CORYR30) .25 cup, chopped Walnuts
-Set oven to 350 degrees.
-In coffee grinder, grind 3 tbsp of flax seed. Put in a bowl with 9 tbsp of water. Mix, then set aside for about 5 minutes until the mixture gels.
-Put a small zucchini in the food processor and blend until finely chopped.
-Mix sugar, coconut oil, vanilla, cocoa powder, flax mixture. Add dry ingredients: flour, baking powder, salt. Fold in chocolate chips.
-Bake brownies for 25 - 30 minutes.
-Icing: Mix confectioners sugar, 1.5 tbsp of cocoa powder, maple syrup and margarine. Ice brownies with icing once the brownies have cooled.
