Vegan Pasta with Vegan Chick'n & Bacon

Ingredients
Ingredients 1/2 lb. of 1 pound box pasta 1 package Smart Strips - Chick'n® (vegan) 1/2 package Smart Bacon® (Vegan) 1 1/2 c. broccoli flowerets cut into bite-sized pieces 1 red pepper, sliced in long strips 1 small onion, sliced in long strips 2 cloves garlic, minced 1 tbsp. olive oil or cooking spray Vegan Parmesan cheese
Directions
Makes 4 large servings and is easy to convert to larger batches for bigger families.

Cook pasta according to package directions.

In a large skillet, sauté broccoli, onion and red pepper in olive oil for 2 minutes. Add garlic and sauté 1 minute longer (do not over cook). Brown Smart Bacon in another skillet until crispy and break into bite-sized pieces. Add Smart Strips - Chick'n® and Smart Bacon® to the sauté mixture, cooking just long enough to heat through. Serve over pasta.

Sprinkle with fresh Vegan Parmesan Cheese.

    Delicious! I did change a few things though: I substituted Morningstar Meal Starters Chikn Strips for Smart Strips, added chopped mushrooms and used nutritional yeast instead of parma. - 2/10/09
