Crustless Quiche Lorraine

Ingredients
3 serving Bacon - Gwaltney 2 slices (by SJNETTLES) 2 large Egg, fresh, whole, raw 2 large Egg Yolk 1.5 cup, fluid (yields 2 cups whip Heavy Whipping Cream 3/4 cup, shredded Swiss Cheese or Swiss & Parmesan 2 tbsp Butter, salted1/2 tsp saltPinch white pepper
Directions
Cut bacon in 1/4 inch pieces and cook until browned. Remove to paper towel. Beat eggs, yolks, cream and seasonings together. Add cheese (or cheeses) and bacon. Spray tin or paper liners with cooking spray. Pour into muffin cups. Dot top with piece of butter. Bake at 375degrees until firm.
