Sweet and Spicy Pepper Jelly

2 cups unsweetened apple juice1 Scotch Bonnet (or habanero), seeded and minced1 Tabasco chili, minced (https://en.wikipedia.org/wiki/Tabasco_pepper)2 tbsp white wine vinegar2 tsp calcium water2/3 cup sugar2 tsp pectin
Combine apple juice and minced peppers in a pot. Bring to a simmer and cook for 20 minutes.
Add the lemon juice and calcium water in a pan and bring to a boil.
Whisk together the sugar and pectin and add to the boiling mixture, stirring well.
Cook 1 minute.
Can 10 minutes.
Serving Size: Makes ~ 2 ¼ cups, 18 (2 tbsp) servings
