1 cup rolled oats1 cup plain flour1 cup brown sugar0.5 cup shredded coconut125 grams unsalted butter2 Tbsp maple or golden syrup1 Tbsp water0.5 tsp baking soda
Preheat oven 160'C. Line oven trays with baking paper.
Combine oats, sifted flour, sugar and coconut in a large bowl. Combine butter, syrup and water in small saucepan, stir until smooth over low heat; stir in soda. Stir into dry ingredients.
Roll level tablespoons of mixture into balls; place about 5 cm apart, flatten slightly. Bake about 20 minutes; cool on trays.
Store in airtight container. Makes 25 cookies.
