Egg-Rice Casserole

Ingredients
3 eggs.75 c rice, cooked.25 c amaranth flour.5 c milk1 oz shredded Swiss cheese1 dash salt1 dash black pepper.5 tsp parsley.5 tsp oil
Directions
grease a 8inch casserole dish.
Mix the eggs and milk well, then add all other ingredients, pour in the dish.
Bake at 200'C for 30 minutes,
a good left-over dish for 2
