Lemon Zucchini cookies reduced fat

Ingredients
1 stick butter1 c unsweetened applesauce1 c sugar2 eggs2 tsp lemon juicepeel of lemon, grated2 c white flour2 c whole grain flour2 tsp baking powder1 tsp salt2 c grated zucchini1 c chopped walnuts
Directions
Preheat oven to 375. Spray cookie sheets with non-stick spray. Cream sugar, butter, and applesauce. Beat in the eggs, juice and peel. Stir in the flour and dry ingredients. Stir in the grated zuchinni and nuts. Bake 15 to 20 minutes, till golden brown. Can be glazed with 1/2 c of confectiners sugar mixed with 2 tsp. of lemon juice.

    I love zucchini cookies & these are ok. I ended up adding cinnamon and vanilla to get more flavor and I also added raisins. FYI - The recipe produces a cake-like cookie. - 7/6/08
