Sweet Potato Shepherd's Pie

Ingredients
2.0 pat (1" sq, 1/3" high) Butter, salted0.25 cup Milk, 2%, with added nonfat milk solids, without added vit A1.0 1tsp Olive Oil2.0 cup, chopped Carrots, raw1.0 package (10 oz) Peas, frozen2.0 cup, cubes Sweet potato12.0 oz Ground beef, lean1.0 serving Fresh Green Beans (1 cup)
Directions
In 1tsp olive oil saute chopped onion. Add beef and brown. Season w pepper. In a large bowl mix frozen peas, chopped green beans, coined carrots and add cooked beef. At the same time peel and cube and boil the sweet potatoes. Put mix into a 9x9 casserole dish (I greased it with 1/2 pat off butter). Drain potatoesand mash with 1.5 tbsp butter and 1/4 cup milk. Top dish w mashed sweet potatoes. Bake at 350 until golden, about 20 minutes. Serving Size: 6 servings in a 9x9 casserole dish
