Ingredients
1.0 cup Lentils, cooked0.25 cup Olive Oil1.0 cup (8 fl oz) Yogurt, plain, low fat0.5 cup Applesauce, unsweetened1.0 cup Bob''s Red Mill Gluten Free All Purpose Baking Flour2.0 large Egg, fresh, whole, raw0.5 cup Rice flour, white0.5 cup Rice flour, brown0.5 cup Bob''s Red Mill Tapioca Flour0.75 cup Maple Syrup1.0 tsp Baking Soda1.0 tsp Baking Powder0.5 tsp Salt1.0 tsp Cinnamon, ground1.5 cup, quartered or chopped Apples, fresh with skin
Directions
Mix all dry ingredients together in small bowl. Purée lentils with olive oil. Add remaining wet ingredients (except apples). Add dry ingredients to wet. Incorporate apples. Bake at 400F for 20-25 minutes. Cool in pan before removing from pan.
