Light and Lemony Muffins

1 1/4 c. milk1/2 c. plain or vanilla yogurtGrated rind of 2 large lemons2 T. Lemon Juice2 c. White Flour1 c. Whole Wheat Flour2 tsp. baking powder1 tsp. baking soda1/4 tsp. saltpinch ground nutmeg2/3 c. brown sugar1 egg1/4 c. applesauce1 tsp. vanilla
Preheat oven to 400 degrees. Grease muffin tin. In a medium bowl, whisk together milk, yogurt, lemon rind, and juice; let stand for 5 minutes. In seperate large bowl, combine flours, baking powder and soda, salt and nutmeg. Whisk sugar, egg, applesauce and vanilla into milk mixture. Pour over dry ingredients and stir just until moistened. Spoon into prepared muffin pan.
Bake for 20-25 minutes if using regular muffin tin.
Bake 10-12 minutes if using a mini-muffin tin.
Makes 12 large muffins or 48 mini-muffins.
