Collard Greens

Ingredients

1 Bunch of Collards, the thick part of the stems removed (cut out), rolled andcut in ¼ inch strips 2 Smoked turkey necks or 1 leg(optional)2 Cloves of Garlic1/2 Teaspoon of Sea Salt1 1/2 tablespoon vinegar1 tablespoon of White cooking Wine1/2 teaspoon sugar1 tablespoon of pepper1 tablespoon of extra virgin olive oil4 cups of water (or chicken or veggie stock)
In a large pot heat the olive oil and add the garlic cloves. Sautee garlic for about two minutes.
Add and fold greens to coat them with the oil (fold greens in the oil over a medium heat for about two minutes.)
Sprinkle in salt and sugar
Add Wine
Add 4 cups of water or stock
Add turkey necks
Stir
Cover and reduce heat and allow them to simmer for 1 hour
Check Water Level from time to time, but there should be no reason to add water. If you have to add water, then your fire is too high
For extra tender greens cook additional 30 minutes
