Sun-dried Tomato Couscous

Ingredients
1 1/4 cups of water1 cup couscous3 tablespoons extra virgin olive oil1/2 cup sun-dried tomatoes (drained and finely chopped)2 tablespoons fresh basil (chopped)10 pitted black olives2 garlic cloves (crushed)Dash of salt to tasteDash of fresh ground black pepper to taste1 teaspoon finely grated lemon zest (from the outside of the lemon)2 tablespoons of fresh lemon juice (squeezed lemons)
Directions
Makes 4 large servings

Bring the water to a boil. Stir in the couscous, cover and remove from the heat and let stand for 5 minutes.

Spoon the couscous into a medium bowl and mix in 2 tablespoons of the olive oil, the tomatoes, the basil, the olives, the garlic, the salt, the pepper, the lemon zest, and the lemon juice.
