12 oz whole wheat elbow macaroni 12.3-ounce package low fat silken tofu (Mori-Nu or similar)1 tbsp unsalted butter1 cup grated "old" cheddar cheese
Cook the macaroni to al dente and drain, but keep hot.
Puree the tofu until perfectly smooth.
Pour into a large saucepan, add the butter and cheese.
Heat, stirring often, over low heat until the cheese is thoroughly melted.
Add the cooked macaroni to the sauce, stir together well and serve.
