Marilyn's Black Beans

Ingredients
2.0 cup Beans, black2.0 Med. Green Bell Pepper3.0 cup, chopped Onions, raw6.0 tbsp Extra Virgin Olive Oil6.0 clove Garlic
Directions
Soak the dried beans overnight with 1/2 the onions, green pepper and garlic. The next day, saute the rest of the ingredients in the oil until they are soft and the onion slightly carmelized. Add this to the pot of beans and bring to a boil. Lower heat and simmer until the beans are soft, adding water as needed. Slightly crush the beans as they cook to create a nice gravy.

Serving Size: Makes about 5 1 cup servings. Serve over brown rice.
