1.25 cup Del Monte Diced Tomatoes, No Salt Added 1/2 tbs basil1/2 tbs oregano1/4 tsp diced garlic2 pat (1" sq, 1/3" high) Butter, unsalted6 ounces Chicken Breast (cooked), no skin, roasted .25 cup Bread crumbs, dry, grated, plain 1/4 cup Kraft Parmesan Cheese1 medium Egg, beaten1/4 cup Shredded Mozzarella Cheese (Part Skim)
Combine tomatoes, basil, oregano and garlic in sauce pan and simmer for 30 minutes. Crush tomatoes with potato masher in pan to reduce size of chunks.
Melt Butter in glass baking pan. Beat egg. Combine bread crumbs salt, pepper, and parmesan. Dip flattened chicken breasts in egg and then in bread crumb mixture. Place in baking pan and bake at 350 for 30 minutes.
Pour sauce over chicken breasts and bake for 10 minutes.
Sprinkle mozzarella over chicken and bake for a final 10 minutes until cheese is melted.
Serving Size: Makes 2 generous servings
