No Sugar Chocolate Ice Cream

Ingredients
2 cup, fluid (yields 2 cups whip Heavy Whipping Cream 1 cup Coconut Milk (Silk) .75 cup xylitol (by MOOKIELJW) 6 large Egg Yolk .5 cup Cocoa, dry powder, unsweetened .125 tsp Vanilla Extract 1 tbsp Bob's Red Mill Xanthan Gum (Thickener) 1 tbsp serving (by ADDICTED2DONUTS)
Directions
Grind Xylitol in a coffee grinder to a fine powder
in a small pot simmer heavy cream, coconut milk, sweetener and salt until completely dissolved. Usually about 5 mins
In a separate bowl whisk yolks
Slowly pour in 1/2 of hot cream mixture. Mix thoroughly.
Pour back into the pan and add cocoa and Xanthan gum and mix thoroughly. Heat until slight bubble and mixture sticks to back of spoon. Remove from heat. Pour into a freezer safe bowl. Cool to room temp or place in the refrigerator. Once cool place in freezer. Serve with fruit
