Black Beans, Corn and Cheese on Sweet Potato

Ingredients
1 can S & W Black Beans 50% Less Sodium1 can Safeway Corn No Salt Added6 cups Sweet Potato, cooked & mashed1/3 cup Lucerne Sharp Cheddar, shredded
Directions
1. Pierce then wrap sweet potatoes in plastic wrap, or quarter and place in pressure cooker. Microwave 3 minutes, then rotate. May take 9-12 minutes.

2. Cafefully (steam is very hot!) remove skins. Mash potatoes with fork. Divide into 6, 1 cup servings.

3. Open beans and corn, drain. Rinse beans throughly.

4. Top sweet potatos with 1/3 cup beans, 1/3 cup corn, and very lightly sprinkle with cheese.

Also works good when placed in baking dish and broiled for a few minutes to melt cheese.

    This was delish! I was doing this as a quick breakfast from memory. I forgot the corn, and added some cumin to the black beans. Yumm! It will probably be even better with the corn!     This makes a really satisfying and tasty meal. I cut my sweet potatoes in quarters and cooked in a covered glass microwave bowl with about 2 tablespoons water. Used frozen corn. Good recipe for storing individual servings to reheat. Great combination of flavors and textures! - 11/23/08
