Indian Dhal Soup

Ingredients
2 tbsp butter or margarine2 garlic cloves1 medium onion1/2 tsp turmeric1 tsp garam masala (indian spice mix)1/4 tsp chili powder1 tsp cumin2 lbs tomotoes (stewed or fresh)1 cup dry red lentils2 tsp lemon juice2.5 cups vegetable soup broth1.25 cups coconut milksalt and pepper to tastedash of coriander
Directions
In large pot, saute butter, garlic and onion until soft. Add in spices and saute for 30 seconds. Add remaining ingredients and bring to a boil. Reduce heat and simmer until lentils are soft, stirring occasionally. Serve hot and garnish with a dash of lemon juice and coriander if desired.

Makes 10 servings (1 cup each).

This recipe is still very good on the next day and it freezes well.
