My healthier Breakfast Wrap

1/2 C Great Egg-Spectations egg whites1/2 C Mushrooms, sliced1 small Red Potato, diced1 TB Scallions, chopped1/2 C Spinach, torn in pieces1 low fat tortilla wrap1 slice *Kraft - Fat Free Singles - Sharp Cheddar or any cheese of choiceSalt & Pepper to taste
I use Olive Oil spray in fry pan, sautee potatoe, and mushrooms till potatoe is cooked , add eggs, salt pepper and continue cooking till eggs are nearly done to your taste, add scallions and cheese-can also add bacon bits if desired. Remove from heat and put on a warm tortilla wrap, roll up and enjoy! Good for on the move eating. I use butter and more not non fat cheese for fattening up hubby.
