Tiramisu Parfait

Ingredients
1 box sugar free vanilla pudding mix (made as directed on box)1 package (8oz) fat free cream cheese (I prefer to use marscapone cheese because it has a mild taste compared to regular cream cheese, you can find it in a container in the gormet cheese section of the grocery store.)1 container cool whip free1.5 tsp vanilla extract4 packets splenda1/2 cup coffee, strongGingersnap cookies (about 2 per serving. - you can use sugar cookies or biscotti as well)Cocoa powder or sugar free hot cocoa mix
Directions
First, make sugar free pudding according to directions. Let sit in fridge to firm. Then, in food processor or with hand mixer, beat the cream cheese, spenda, and vanilla extract together until smooth. Take pudding out of fridge after 5 minutes. Dip ginger snaps into coffee until soaked but not crumbling apart. layer desert in parfait or wine glass, starting with a cookie at the bottom, followed by pudding, then cream cheese mixture. Add another cookie, then add pudding, then cream cheese mixture, then put a spoonfull of whipped topping on top. Sprinkle with cocoa powder or sugar free cocoa mix and put a ginger snap on top for decor.

    I tried using the cream cheese but it seemed a bit heavy. It was very tasty. (I added an ounce of Kahlua to the coffee) & soaked the ladyfingers instead of cookies. - 6/12/08

    Unhelpful to those of us who:
    a) Do not live in the US

    I also added coffee to the cream cheese, and I used white chocolate sugar free pudding instead of vanilla pudding. It was so decadent, I couldn't believe it was low calorie! I loved it. My dad didn't like it, though, he thought it was too bitter. Next time, I'll probably use a little more Splenda. - 1/27/10
