My Red potato salad

Ingredients
2 1/2 Lbs Red Potatoes Cleaned4 Hard Boiled Eggs Diced1 Cup Green Onions Thinly Sliced 1 Cup Mayo1 Tablespoon Tarragon Vinegar2 Ribs Celery Diced3/4 Cups Red Onion (optional) 1/2 Cup Sour Cream1 1/4 tsp Dijon Mustard 3/4 tsp Kosher Salt ( To Taste)1/4 tsp Fresh Ground Pepper (To Taste) If your watching your weight you can use light or fat free ingredients it all depends on your taste.
Directions
Place red potatoes in pot ,add water to cover them
and boil for about 17 minutes until tender. Check with fork you don't want them mushy and you don't want them hard. Drain them and set in large mixing bowl.
Combine Potatoes with eggs,celery,red and green onions. In medium mixing bowl combine sour cream , mayo,vinegar , & Dijon mustard then add salt and pepper to taste. Lightly toss all together but being careful not to mush potatoes. Serve it as a great side with anything room temp or refrigerate first then serve depends on your taste.
Makes about 7 to 8 1-cup servings.
