Crawfish Jambalaya

2 tbsp. margarine or butter1 cup green bell pepper, chopped1 cup celery, chopped1 cup white or green onions, chopped1 clove garlic, minced1 cup uncooked rice1 can tomatoes, your choice1 can beef or chicken broth1 12 oz. package crawfish tailsseasoning to taste
Melt butter in pan. Add bell pepper, celery, onion, and garlic. Saute until tender but not brown. Add remaining ingredients. Bring to a boil. Stir, reduce heat, cover, and simmer about 20-25 minutes, 35-40 minutes if using brown rice. Cook as if cooking rice, making sure not to stir too often. Cook until moist but not wet. Fluff and serve. Recommended seasoning are garlic and onion powder, and Creole seasoning such as Tony Cachere's.
