Melinda's Easy Chicken Shish-Kabobs

Ingredients
Marinade for Chicken for Shish – kabobs 1 Tablespoon Olive Oil1 Tablespoon Worcestershire1 Tablespoon Rosemary2 Tablespoons Minced GarlicVeggies for the Shish – kabobs2 packages pearl onions2 packages button mushrooms6 medium (or 4 large) zucchini or other type of squashExtra Ingredients:4 Boneless Skinless Chicken Breasts5 Tablespoons Olive Oil1/2 cup WaterGarlic PowderRosemaryMinced Garlic*nutritional information for this recipe based on a 1.71lb package of boneless skinless chicken breast.
Directions
Cut up meat and marinade in a gallon baggie in Marinade recipe above overnight. (The chicken is easier to cut up if it is somewhat frozen.)

Marinade veggies in one baggie per veggie type for 1 hour.
Pearl Onions (peal skin and marinade in 1 Tablespoon Olive Oil)
Mushrooms (marinade in 3 Tablespoons Olive Oil)
Zucchini(Cut in about 1 inch slices and marinade in 1 Tablespoon Olive Oil with some Rosemary and Garlic Powder)

Soak skewers (about 40) in half cup water and a tablespoon minced garlic in a gallon baggie for 1 hour.

Makes 10 servings of 4 skewers per person.

    These were very good! I didn't think with so few ingredients in the marinade it would have much flavor but I was very wrong! My husband and I both loved them. Served with wild rice it was the perfect meal. Will definitely make again. - 10/24/08
