Crustless Spinach and Feta Quiche

5 oz Feta Cheese 6 large Egg, fresh, whole, raw 1 cup, pieces or slices Mushrooms, fresh 0.50 large Onions, raw 1 tbsp Extra Virgin Olive Oil 2 cup Baby Spinach (raw) 8 oz Fairlife - 2% Milk (Ultra Filtered) 1 cup, chopped or diced Broccoli, fresh
Preheat oven to 350.
Saute diced onion, chopped broccoli, and mushrooms in oil til soft.
Stir in spinach and wilt.
With an electric mixer, beat 6 eggs and milk with salt/pepper to taste.
Spray a pie pan with non-stick spray and pat veggies on bottom.
Sprinkle 4 oz. of feta on top, then pour egg mix over. Top with remaining feta and bake for 30 minutes.
Allow to cool completely before slicing.
Serving Size: 6 slices
