Paleo Morning Glory Muffins

Ingredients
1 cup Almond Flour 1.5 tsp Coconut Flour 1/8 tsp Salt1/4 tsp Baking Soda1/2 tsp Cinnamon1 tbsp Coconut Oil 2 large Eggs 2 tbsp Raw Honey1 tsp Vanilla Extract1/3 cup Unsweetened Apple Sauce 1/4 cup Unsweetened shredded Coconut1/4 cup Unsweetened Raisins 1/3 cup Crushed Pineapple 1/4 cup Grated Carrots 1/3 cup Walnuts, chopped
Directions
Preheat oven 350 degrees
In a mixing bowl combine first five ingredients
In a separate bowl whisk coconut oil, eggs, vanilla, honey and apple sauce
Combine wet & dry ingredients
Mix in raisins, coconut, pineapple, carrots and walnuts
Pour into lined muffin tins
Bake for 15 minutes or until a toothpick comes out clean
Let cool on cooling rack & serve!! (may drizzle with maple syrup for extra YUM!)
Store in refrigerator
