Blueberry Quinoa muffins--not GF

1.0 cup, unthawed Blueberries, frozen (unsweetened)1.0 tbsp Soy Flour2.0 tsp Baking Powder4.0 oz Trader Joes, Plain non fat yogurt1.0 cup Nature's Earthly Choice Quinoa - 1/4 cup dry 1/2 cup cooked1.5 cup Flour - Gold medal all purpose flour59.0 gram Sugar, Domino light all natural sugar & stevia blend8.0 oz whey liquid from homemade yogurt
Preheat oven to 400F.
Mix dry ingredients and then add pre-cooked Quinoa. Mix in yogurt, whey, soy egg, and blueberries until just combined. Add enough water to fully combine, about a cup. Mixture can be lumpy.
Fill muffin cups about 2/3 full depending on their size to get 12. Mine made about 15 muffins.
Bake in oven about 20 min until done.
Serving Size: Makes 12 muffins. A muffin is a serving.
