2 cup Bob's Red Mill Low-Carb Baking Mix2 tsp Baking Powder .5 tsp Baking Soda .5 tsp Salt 1.5 tsp Cinnamon, ground 1 tbsp Coconut Oil 1.5 cups Milk Reduced Fat Milk 2%3 large Egg, fresh, whole, raw 1 tsp Baking - Vanilla Extract
Mix baking soda, powder, salt and cinnamon. Add in melted coconut oil, eggs, vanilla and milk. Beat until fluffy. Slowly mix in baking mix. Spray waffle iron with coconut oil before baking.
