Strawberry scones

1 Egg, lightly beaten1/4 tsp Salt1 tsp Vanilla Extract1 cup, frozen Strawberries, thawed and chopped. 2 tsp Baking Powder1/4 tsp Baking Soda3 Tbsp Granulated Sugar1/2 cup Vegetable Shortening2 cup all purpose flour 2/3 cup whey from homemade yogurt or buttermilk
Preheat oven to 400F. Move rack to middle.
Mix dry ingredients, flour, salt, sugar, baking powder and baking soda
Add chilled shortening cutting into flour mixture with a pastry cutter or a fork. Stop when mixture looks crumbly.
In separate bowl mix whey (or buttermilk) and egg. Add vanilla if desired.
Form a hole in flour mixture and pour in egg mixture. Fold together until combined but take care not to over mix. Fold in strawberries.
Lightly sprinkle counter with flour. Roll out dough into prepared surface. Just enough not to be sticky. Add flour if needed. Either roll and cut out biscuit shapes or form two balls. If rolling into balls, flatten them and then cut each disk into 4 equal pieces. Add to cookie sheet with parchment paper. Bake 10-15 min.
