Summer Squash Slaw

Ingredients
2 small yellow summer squash, juilenned2 small zucchini, juilenned1 small sweet red pepper, juilenned1/3 cup sliced onion3 tbsp olive oil2 tbsp vinegar1 tbsp light mayo1 tsp sugar1/2 tsp dill 1/2 tsp garlic salt1/4 tsp celery salt1/4 tsp pepper
Directions
Combine squash, zucchini, red pepper, and onion. In small bowl combine remaining ingredients; mix well. Pour over squash mix and toss to coat. Cover and refrigerate.

    I've made this several times. It's awesome. I suggest salting, sweating, and draining the water from the squash mixture before mixing in the dressing ingredients. - 7/24/12

    I liked this a lot. I subbed some carrots for the red peppers. I also didn't have celery salt or garlic salt, so I just used powdered spices and added salt to taste. My sauce ended up a tad too watery when added to the veggies, but I loved the taste. Will make again. Thanks! - 7/27/11
