Blueberry walnut buttermilk pancakes

0.75 cup Whole Wheat Flour1 cup All-Purpose White Flour2 tsp baking powder2 tbsp Granulated Sugar1 large Egg, slightly beaten2 cups Buttermilk1 tbsp vanilla extract3 tbsp Coconut Oil, melted1 cup finely chopped Walnuts1 cup Blueberries, fresh/frozen
Preheat griddle to 350 (medium-high). Combine dry ingredients in a large bowl. In a smaller bowl combine wet ingredients. Make a well in the center of the dry ingredients and pour wet ingredients into center. Mix until combined (will still be lumpy). Fold in walnuts and blueberries. Spoon 1/4 cup of batter onto preheated griddle and cook until bubbles start to form. Flip and cook for another 2 minutes or until desired doneness.
