Erwtensoep (Dutch Pea soup with smoked sausage)

Ingredients
250 gram(s) Rookworst, mager 1 tbsp Extra Virgin Olive Oil 1 cup Onions, chopped1 cup Carrots, sliced1/2 cup Parsnip, sliced3 cloves Garlic, chopped1 cup Potato, sliced500 grams Split Peas 8 cups Water1 tsp black Pepper1 tsp Caraway Seeds 1 tsp Thyme, 1 tsp Rosemary, 1-2 Bay Leaves
Directions
Cook the rookworst for 20 minutes at a low simmer, set aside. Add olive oil and black pepper to large pot, add onion and garlic, saute for 5 minutes. Add carrots, parsnip and potato, cook for 5 more minutes. Add water, herbs and washed split peas, cook for 1-2 hours at a low heat. Add sliced rookworst half an hour before serving.
