Salmon with Tunisian Spiced Vegetables

Lemon Juice, .5 cup Red Ripe Tomatoes, 2 large whole (3" dia), diced Onions, raw, 1 large, dicedGreen Peppers (bell peppers), 1.5 cup, strips Peppers, sweet, red, raw, sliced, 1.5 cup Garlic, 3 cloves *Cumin seed, 1 tbsp *Extra Virgin Olive Oil, 1 tbsp Salt, .5 tsp Atlantic Salmon (fish), 36 oz Parsley, 1 cup
1. Combine all the ingredients, except salmon and parsley, in a bowl
2. Cut 6 large pieces of foil and lightly oil
3. Place salmon on foil
4. Place the the rest of the ingredient mixture on top, except the parsley
5. Wrap the foil tightly
6. Grill foil packets for 10 mins, do not flip
7. Garnish with parsley
