Crockpot Ropa Vieja

Ingredients
1 3/4 lb flank steak7.5 oz tomato sauce (low sodium -- half of a 15 oz can)1/2 c water3 cloves garlic1 onion, quartered and sliced thin1 red pepper, quartered and sliced thin1 green pepper, quartered and sliced thin3 bay leaves1 t ground cumin1 can (15.5 oz) diced tomatoes, low sodium1/2 t pepper3 T red wine vinegar
Directions
Makes 6 adult size servings (a little over 3/4 cup)

Add tomato sauce, garlic, cumin, water, bay leaf, pepper, and vinegar to the bottom of a crock pot and stir.

Layer onions in bottom of crock pot.

Add beef atop onions, and be sure the liquid mixture is spooned atop the steak so it doesn't dry out (just a bit spooned, or press the steak down so it flows over).

Add the peppers atop the steak and the diced tomatoes evenly atop all that.

Cover and cook on low for 8 hours. Once cooked, remove the meat from the crock pot and use two forks to shred before returning to the pot.

Serve over rice or alone.

    I am using a chuck roast that I have removed "most" of the hardened fat areas out of. Putting the garlic in the roast to add some flavor to the meat as well, plus I am using green and red bell peppers and sweet yellow and red onions. Pump the VEGGIES! - 10/28/09

    I liked this recipe and think it's one I will definitely be repeating! I may throw in some hotter chiles just to spice it up a little. Also, if you want to save a little money, it strikes me as being not-absolutely-necessary to use flank steak. Another cut should work just fine! - 9/22/08

    Phenomenal. Used a 1/2 london broil (20 oz), huge veggies & a chayote. Needed a bit more spice (added a sazon pkt). Hit the veggies with the immersion blender for a bit to thicken. I think you could also add a small sweet potato if desired. - 4/26/12

    I made it using sirloin instead of flank steak. I think it needs more seasoning, so next time, I'll probably put in more cumin, more garlic, and probably some cayenne pepper. It was really good over brown rice. Overall, pretty good. - 6/8/11
