Egg "Muffins"

Ingredients
5.0 large Egg, fresh, whole, raw0.38 cup Spinach, fresh1.5 serving Cheese--Provolone Cheese 0.5 medium whole (2-3/5" dia) Red Ripe Tomatoes0.25 cup, chopped Onions, raw3.0 oz Chicken - Hillshire Farm Deli Select Rotisserie Seasoned Chicken Breast 99% Fat Free
Directions
-Mix all ingredients in a bowl, season to taste -Spray muffin tin, with olive oil cooking spray -Separate 2 slices of provolone into 6 ( I used Everyday Essential Brand from Cub Foods). Place in bottom of muffin tins - Pour in egg mixture Bake at 325 for 20 minutes.Let cool and invert onto plate. These can be freezed individually for a quick breakfast. I usually don't freeze them beyond a week.
