Shrimp with Zucchini & Mushrooms

Ingredients
15 medium shrimp1/2 cup, chopped onion4 cloves garlic2 medium zucchini1/2 cup, pieces or slices fresh mushrooms1/4 cup, grated Parmesan cheese2 tablespoons olive oil or cooking spray instead.
Directions
1. Heat olive oil in fry pan.
2. Add chopped onion and minced garlic cloves. Cook until softened.
3. Peel zucchini and slice lengthwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
4. Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
5. Top with cheese and serve with green salad.
