Roasted Herb Salmon

4 5 oz salmon fillets (1 1/2" thick)2 TBS dijon mustard2 TBS fresh lemon juice1 tsp dried thyme1 tsp dried rosmary1 tsp oregano1/2 tsp salt & pepper1 small onion -thinly sliced2 tomatoes -thinly sliced
Make slits along top of each salmon fillet.
In a shallow dish wisk together mustard, lemon juice, thyme, rosemary, oregano, salt & pepper. Add salmon, coat both sides. Cover and refrigerate for 30 min -1 hour. Reserve marinade.
preheat oven 450 degrees. Coat shallow pan with cooking spray. Arrange onions and tomato slices in the bottom of pan. Place salmon on top of tomatoes and onions. Pour remaining marinade over salmon. Roast for 15-20 min until fish is fork tender.
