1.25 cup Flour - Gold medal all purpose flour .25 tsp Salt 3 tsp Granulated Sugar 4 tsp Baking Powder 1 cup Milk, 2%, with added nonfat milk solids, without added vit A 2 large Egg, fresh, whole, raw 5 tbsp Butter, salted
Mix dry ingredients with work. Warm milk and butter in microwave for a minute on high power. Stir until butter melts. Add milk/butter mixture to slightly beaten eggs and whisk to combine well. Add wet ingredients to dry and mix well. Drop by scant 1/3 cupfuls onto preheated, buttered griddle. Cook till bubbles start to pop on top and edges are dry. Flip pancakes and cook another 2 minutes on the other side. Serve with fresh or frozen berries, whipped cream, or just a little maple syrup.
