Ingredients
16 oz Shrimp, cooked .75 cup Silk coconut milk unsweetened 1 small Onions, raw 1 tbsp Extra Virgin Olive Oil 1 cup Peas, frozen 2 tsp Ginger Root 2 tsp Garlic 5 grams Cilantro, raw 1 tbsp Curry powder .5 cup Pureed Tomatoes
Directions
Saute onion in oil until soft. Add curry, garlic and ginger and saute until fragrant. Add coconut milk and tomatoes and simmer for 5 min. Add frozen peas and shrimp and simmer until cooked through.
