Chicken Broccoli Casserole - feeds 4 - 8

Ingredients
2.5 spear (about 5" long) Broccoli, fresh2.0 cup, pieces or slices Mushrooms, fresh2.0 serving Perdue Boneless, Skinless Chicken Breast10.7 oz Campbell's Cream of Mushroom Soup - 1 can15.0 oz La Choy Bean Sprouts - 1 can4.0 tbsp Dean's Heavy Whipping Cream3.0 oz Great Value Mozzarella, Shredded
Directions
Pre-cook chicken 3/4 of the way done (some pink), cool, diced in larger cubes. Break up broccoli into bite size pieces, blanch, drain, cool. In large mixing bowl, mix chicken, broccoli, mushrooms, bean sprouts, and mozzarella. In small bowl, mix soup & HWC. Gently stir soup mixture into chicken, tossing to coat all ingredients. Spray 9 x 13 pan with non-stick oil. Pour chicken mixture into pan. Cook 30-45 mins. in pre-heated 400° oven, or until bubbly hot. May want to cover with alum. foil for last 15 mins. if edges are starting to brown too much. Serving Size: 9 x 13 glass pan
