Cheeseburger Soup

Ingredients
.5 c Carrot.75 c Celery2 c Onion~1 Lb Ground beefDried herbs - Oregano, Basil, garlic~6 c chicken broth (enough to cover potatoes)2 c Cubed Potato1.5 c whole milk2 tb butter1/3 c flour2 cups shredded cheese of choice.5 c ketchup2 tb mustard
Directions
Sautee Carrot Celery and onion in a little oil until onion is softened. Add herbs to taste and beef, cook through.
Add chicken stock and potatoes and cook until tender.
Meanwhile, heat milk with butter, whisk in flour.
Add milk mixture, ketchup & Mustard to soup and bring to boil.
Simmer 5-10 minutes. Take off heat
Add cheese, combine and serve.
