Salmon Croquettes

Ingredients
1 14.75 oz can pink salmon1/3 cup EGGBEATERS or other egg substitute2/3 cup seasoned bread crumbs1 small red onion, diced finely2 T reduced fat sour cream1 T olive oil, for fryingWorcestershire sauce - to tasteLemon juice - to taste
Directions
Drain salmon and combine all ingredients in a bowl. Form patties into small, uniform patties - and make sure they are not too thick.

(* A good trick is to line a mayonnaise jar lid with some plastic wrap and form patties to fit *)

Heat oil in a medium-high cast iron skillet and add patties - make sure not to overcrowd the pan. Fry on each side for about 3-4 minutes or until golden.

Drain on paper towels and serve with your choice of condiments and a squeeze of lemon juice!

    Very good...just had a hard time keeping a solid patty.. a little moist! But very tasty and filling! I had on bed of lettuce oh and also added shredded carrots with the onion! Awesome. - 1/6/08
