Low Sodium Pancakes

Ingredients
1 1/4 cup flour2 T Splenda2 t sodium free baking powder1/4 c Egg Beaters1 c nonfat milk1 T vegetable oil
Directions
Stir together dry ingredients. Combine egg beaters, milk and oil in separate bowl. Add all at once to flour mixture. Stir until blended but still slightly lumpy. Pour about 1/4 cup batter onto hot greased griddle for each pancake. Cook until browned on bottom (when bubbles form and then break). Turn and cook on other side until done.

Makes 3 servings of 2-3 pancakes each.

    I made the recipe just as it is written. I found it was too thick and added just enough milk to thin it down a little. The pancakes were delicious.

    I substituted an egg, sugar, and regular baking soda - still a *little* sodium but it's hardly anything compared to something like a boxed mix, and these are really easy to make - mix everything in a bowl and pour. And yes, they taste great too :) - 9/3/11

    I made waffles with this batter. 3/4 cup of batter made 1 LARGE waffle. I used Benecol Light buttery spread on top along with some sugar-free/low sodium maple syrup. It was DELICIOUS! Thank you so much!!! - 10/19/09
