Directions
Saute chopped onion, green pepper, & shredded carrot in olive oil til onion smells sweet. Add crushed garlic cloves, cook for 1 min or til garlic becomes aromatic. Add contents and liquid of 3 cans.. diced tomatoes & both cans chili beans. Bring to just under a boil, reduce heat to low-med stirring to not burn bottom. Cook gentle simmer 20-30 mins.
