Ingredients
2 cups sugar3 cups whole wheat flour1 tsp. salt1 tsp. cinnamon1 tsp. baking soda1/2 TB baking powder2 eggs2 tsp. vanilla1 cup applesauce, unsweetened2 TB vegetable oil2 cups shredded zucchini
Directions
Make 2 loaves (24 slices)

Preheat oven to 350. Spray loaf pans with Pam and lightly flour. Mix together sugar, flour, salt, cinnamon, soda and baking powder. Add remaining ingredients. Bake about 50. Check it after 40 minutes.

    It's in the oven right now. I added 1 tbsp of flaxseed and omitted 1 tbsp of oil. I also added a little maple flavoring. It was moist and delicious. Thumbs up from the 10 year old, who has never had it. I made mine into 3 loaves. It comes out to about 91 calories a slice. 12 slices a loaf. - 8/1/09
