Cauliflower Cheese Jalapeno Pancakes

1 head, large (6-7" dia) Cauliflower, raw (pureed)1 tbsp Parmesan Cheese, grated 2 large Egg, fresh, whole, raw 1.5 cup, shredded Cheddar Cheese .25 cup, sliced Jalapeno Peppers (optional)Salt and Pepper to taste
Puree Cauliflower in food processor. Add parmesan, eggs, salt and pepper to cauliflower and mix well. Using a non-stick pan-- fry a 1/4 cup portion in olive oil. (Can make a few at a time if desired).
Fry on low to medium heat so olive oil doesn't burn.
When crispy, carefully turn and fry second side.
Top with 1/4 cup or less of cheddar cheese and jalapeno peppers until melted.
Eat alone or with meal plan.
Serving Size: Makes about 8 ---1/4 cup pancakes
