Ingredients
1.0 large Egg, fresh, whole, raw1.0 tsp Salt0.5 cup Applesauce, unsweetened1.0 cup, pitted, chopped Dates0.3 tbsp Lemon juice1.25 tsp Baking Soda2.0 cup Oat Bran1.0 cup Quaker Oats Old-Fashioned Rolled Oats1.0 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil0.25 cup Red River Cereal1.5 cup Whole Milk Buttermilk USDA
Directions
Combine dates, cereal, and lemon juice in 1.5 cups hot water and simmer for 5 mins. Process the rolled oats in food processor until the texture of flour. Mix together the oat bran, oat flour, soda, and salt. Blend the egg, buttermilk, applesauce, and oil. Stir into the dry ingredients with the cereal mixture, stirring just til moistened. Spoon into 12 muffin cups. Bake at 375 for 20-25 mins. Serving Size: 1 muffin.
