Thai Style Chicken Salad

Ingredients
18 ounces chicken breast, steamed or boiled and shredded4 cups watercress, chopped1 cup fresh mint leaves1 cucumber, sliced1 red pepper, julienned3 plum tomatoes, choppedDressing2 tbs coconut milk1 tbs fish sauce2 tbs sweet chili saucejuice of 3 limes
Directions
Combine dressing ingredients in small bowl

combine veggies in a large bowl and toss

Add in shredded chicken

add dresing - toss and serve


(note: I added a small thai chili pepper for some additional heat.. and veggie ingredients are somewhat guesstimated -
