Pistachio Crusted Salmon

Ingredients
6.5 serving Bumble Bee Prime Fillet Atlantic Salmon, 2 oz/56g, about 1/4 cup 1 serving Lemon, fresh squeezed, juice of one whole lemon 1 tbsp Grainy mustard (by PINECONE1) 1 tbsp Honey 30 grams Pistachio Nuts 0.33 cup 4C Breadcrumbs, Panko Plain (by FROGCOOKE) 1 1tsp Olive Oil
Directions
Preheat oven to 275F.
Rinse salmon and pat dry with paper towel. Arrange salmon on baking paper, skin side down. Sprinkle with salt and pepper to taste.
In a small bowl, combine lemon juice, lemon zest, mustard and honey. Spoon mixture and spread evenly over top of each salmon fillet.
Coursely chop pistachios and combine with breadcrumbs and olive oil. Spread pistachio mixture on top of salmon, pressing lightly to adhere.
Bake until salmon is cooked through to your liking and pistachios are golden, approximately 15 - 20 minutes. Let salmon rest for 5 minutes outside of oven before serving.
Serve with steamed green vegetables or a mixed leaf salad.
