Spicy Vegetable Lentil Soup

Ingredients
1 TBS olive oil1 medium onion chopped1 carrot chopped1 red bell pepper chopped5 garlic cloves, sliced2 quarts (8 cups) water1cup dried letrtils28 oz can crushed tomatoes (undrained)2 bay leaves2 TBS balsamic vinigardash of black pepper
Directions
Heat oil in a large saucepan over medium-high heat. Add onion; cook
5 minutes, stirring occasionally. Stir in carrot, bell pepper, and garlic; cook
3 minutes. Stir in remaining ingredients except salt and pepper; bring to a
boil over high heat. Reduce heat; simmer uncovered 18 to 20 minutes, or
until lentils and vegetables are tender. Season to taste with salt and pepper
if desired. Remove bay leaves before serving.

    Great recipie. I added a pinch of chilli pepper seeds for added heat. Also used a blender to smooth out the texture after soup was cooked. I think it would be awesome with a garnish of ricotta cheese and basil. Have added this recipie to my collection and will make it again for sure. - 10/9/08
